In this episode of QUIZINE IN QUARANTINE we look at a dish with over 100 years of history. A dish that is said to have originated in Guangzhou, China and expanded along with foreign trade, making its way to Japan and Southeast Asian countries like Vietnam and Thailand – Shrimp Toast AKA Prawn Toast.
A Chinese dim sum dish that is now a common appetiser in many Australian, American and British Chinese restaurants. We try our hand at re-creating a variation of the famous prawn toast that involve sprinkling sesame seeds on one side of bread before frying – delicious!
INGREDIENTS (4 portions)
150g Chicken breast
200g Shell-off prawn
2 cups of sesame seeds
1 ½ Garlic clove
1 tsp. Coriander powder
1 tsp. Chilli flakes
2 cups of oil (for frying)
5 Pieces white bread
2 Eggs
Handful fresh coriander
Salt and pepper to taste
1. Dice chicken breast into chunks.
2. Put prawns, chicken breast, garlic, chilli flakes, 1 egg, salt and pepper both fresh and coriander powder into food processor and blitz until it is almost like a paste.
3. Spread a thin layer of the mixture on the bread.
4. Roughly whisk 1 egg with a fork
5. Lightly brush the bread with egg on the side of the paste
6. Put sesame seeds on a plate in an even layer
7. Place bread paste side down onto the sesame seeds, remove and then cut into 4 pieces (repeat process)
8. Wait until the oil is hot. Place bread sesame seed side down, fry on low heat for around 2-3 minutes, flip and cook other side for another 2-3minutes until golden brown.
