For the next episode of our series QUIZINE IN QUARANTINE, we take on one of the world’s most well known stir fry dishes – The Chicken Chow Mein! The dish is not only popular with the Chinese diaspora, but a staple in most Chinese restaurants across the world.
QIQ’s Chicken Chow Mein
The Chow Mein itself has travelled far and wide and what started off in China has had its fair share of variation and influences. Whether it’s American Chow Mein, a Brazilian or an Indian variation, one thing remains constant…it’s delicious!
As with most food, it’s about experiment and taste, and at least through the lockdown period it might just be about using what you have…so that’s exactly what we’ll be doing for this dish.
CHICKEN CHOW MEIN INGREDIENTS (serves 4)
400g egg noodles
2tbsp sesame oil
1 full chicken breast
300g Turkish sausage
2tbsp dark soy sauce
2tbsp smoky chipotle sauce (you can use Sriracha also)
3 cloves of Garlic
200g ginger
1 ½ Chopped chunky onions
1 ½ Chopped chunky red peppers
3 Green chilli’s
1tsp Mr.Naga
2tbsp of chilli oil
Pinch of salt and pepper to taste
1. Best to get the egg noodles ready, soak in boiling water until ready. Remember not to make it too soft!
2. Cut chicken breast into strips and add soy sauce, chipotle and season. (For best results, marinate and place in fridge for a few hours).
3. Start with adding the sesame oil and heat
4. Once you see some smoke, you know it’s ready to add the garlic, ginger and onions. Turn heat down to a medium heat.
5. Once onions are have a light brown colour, add peppers.
6. Add marinated chicken and allow cooking for 5-7mins.
7. Add sausages and place lid on pan and allow to cook at a medium heat for a further 4-5mins.
8. Add your fresh chilli and Naga (to taste of course!).
9. Season to taste (but remember the soy sauce is very salty so make sure you taste before adding more).
10. Pour the cooked egg noodles in and mix until ready.
