QUIZINE IN QUARANTINE brings you a wonderful light lunch dish or heavy snack (depending on your perspective) in the form of the CHICKEN ROTI WRAP!

The roti has thousands of years of history, with some saying the bread can be dated back to the Indus Valley civilisation (3500 years ago) and perhaps further. The bread is enjoyed with curries in the sub continent, and with all other types of food across the Middle East, Persia and the Caribbean. Roti differs from Nan in that it contains no yeast and is no unleavened, meaning it has more of a rugged texture than that of the fluffy nan.

We offer our Quizine twang and turn the traditional roti and chicken curry on its head by transforming it into a wrap. We use grilled chicken breast, salad and mint sauce to form the filling in this amazing dish. It is very simple, pretty healthy and tastes gorgeous!

INGREDIENTS
Chicken:
3 Chicken breast
4 tbsp. plain yoghurt
1 tsp. ginger paste
1 tsp. garlic paste
1 tbsp. honey
1/2 tsp. cumin powder
1/2 tsp. coriander powder
1/2 tsp. garam masala powder
1/2 tsp. chilli powder
1/2 tsp. tandoori powder
1 tsp. salt
2 tbsp. olive oil

Roti:
500g plain all purpose flour
1 tsp. nigella seeds
1 tsp. salt
6 tbsp. oil
300ml water

Mint sauce:
4 tbsp plain yoghurt
2 tsp. store-bought mint sauce or fresh mint leaves
Pinch of chilli powder
Pinch of salt

QIQ’s Chicken Roti Wrap!

1. Chop chicken breast up into medium sized pieces. Begin the marinating process. Throw chicken, garlic, ginger, yoghurt, cumin, coriander, garam masala, chilli, tandoori powders, salt and honey into a bowl.

2. Pour in some oil and start to mix thoroughly. Leave chicken to one side for a minimum of approx 30 mins so all flavours are absorbed.

3. Now fire up a pan and throw in the chicken. You won’t need any oil as you should have already included oil in your marinade.

4. Cook on medium heat for approx 10 mins without covering. If you feel the chicken is getting dry, pour in some more oil, cover with lid and reduce heat. We cannot have dry chicken!

5. Now leave your chicken to rest whilst we work up the roti!

6. Throw flour, nigella seeds, salt and olive oil into bowl. Begin mixing everything together. Add water as you go. Soon the mixture will form into a dough.

7. Now knead this dough for approx 5 mins. Leave to rest for approx 10 mins.

8. Tear pieces of dough off and roll into flattened ball shapes.

9. Sprinkle flour on surface and begin to roll the dough out into a thin and circular roti shape.

10. Throw roti on flat pan and cook for approx 2 min on each side. Make sure to keep an eye as it can easily burn.

11. Now it’s time to assemble your wrap. Prepare some salad and mint sauce.

12. Mint sauce is easy to make, chuck some yoghurt, store-bought mint sauce and a pinch of chilli powder into bowl and mix thoroughly.

13. Put everything together into the wrap and enjoy!
