You will have no doubt seen our bagel recipe by now. Well we needed to something to enjoy our bagel with, so now QUIZINE IN QUARANTINE brings you a recipe for some quick salt beef!
This amazing dish is traditionally associated with Ashkenazi Jewish food originating from Central and Eastern Europe. The cut of meat used for this dish, the brisket contains a huge deal of connecting tissue and fat. During the cooking process this turns into almost a natural gelatine which infuses itself into the meat resulting in a beautifully soft and buttery texture.
Creating salt beef is a slow and delicate process which takes a huge amount of time. But we’re showing you some Quizine hacks to speed up the process. See below our recipe for some quick salt beef!
INGREDIENTS
1kg beef brisket
125g sea salt/ pink Himalayan salt
100g brown sugar
1 tbsp. mustard seeds
1 tsp black peppercorns
1 tsp coriander powder
1 cinnamon stick
2 large bay leaves
1 onion
1 handful rosemary
6 garlic cloves
1 litre water
1. Begin by adding water, salt, sugar, mustard seeds, bay leaves, cinnamon stick, black pepper corns and coriander power to cooking pot.
2. Bring mixture to boil, mix until salt and sugar content has melted.
3. Remove from fire and allow the spiced liquid mixture to cook.
4. Now place your beef brisket inside a sealable cooking bag, pour in your cool spiced liquid and seal.
5. Leave the meat to marinate, the longer the better. Leave for a minimum of 2 hours.
TIP: You can leave this to marinate for up to a whole week in a fridge.
6. Now take the brisket out of the bag and place in pressure cooker bowl.
7. Add chopped onions, garlic and rosemary. Now pour the spiced liquid content into the bowl also.
TIP: If you don’t have the time to marinate for full 7 days, cook the meat in the spiced liquid. If you do have the time, then when you cook after 7 days, get rid of the liquid and cook in water.
8. Cook in pressure cooker for approx 50 mins.
TIP: If you don’t have pressure cooker, cook on stove on low-medium heat for approx 5 hours until the beef is meltingly tender.
9. Now remove your beef and leave to rest for approx 10 mins.
10. Cut into pieces and serve up. We made this to go with our fresh homemade bagels! Add mustard to the bagel, throw in the salt beef, some pickles and raw onion, and enjoy the most amazing bagel!
