The next episode of QUIZINE IN QUARANTINE explores arguably the most popular dish in not only meat eating Europe, but also the whole of Western civilisation, and one of our all time favourites – Steak-frites (AKA Steak and fries).
Steak-frites – meaning “steak and fries” in French – is a very common and popular dish served in brassieres throughout Europe consisting of steak paired with French fries. It is considered by some to be the national dish of Belgium, which claims to be the place of its invention.
Although originally a rump steak was used for the OG steak-frites, we go for the fillet, served with fries, gravy and some delicious mustard butter.
INGREDIENTS (serves 1)
Steak + Fries
250g beef fillet steak
50g butter
1 tbsp. olive oil
1 tbsp. sea salt
1 tbsp. crush pepper
1 tbsp. dried garlic flakes
3-4 vine plum tomatoes
As many fries as you want!
For mustard butter
1 tsp. English mustard
50g butter
For gravy
25g butter
25g chopped mushrooms
1 veg stock cube
25g onion gravy granules
100ml water
Steak + Fries
1. Rub olive oil over steak.
2. Season steak generously with salt, crushed pepper and garlic flakes.
Remember to coat both side.
3. Probably a good time to put the fries on if like us, you’re using an air
fryer – for perfectly cooked fries, place in air fryer for 20minutes at 200
degrees.
4. Make sure your pan/griddle is very hot and add butter.
5. Place steak onto pan and allow to cook for 60seconds to build a
crust.
6. Flip steak and allow other side to cook for another 60 seconds.
7. Repeat this process another 2/3 times for a medium-rare temperate.
Remember to base the steak continuously (this involved pouring the
hot butter from the pan over the steak).
8. For a thick cut, remember to cook sides in a similar fashion.
9. Once cooked, allow steak to rest for the same amount of time it had
been cooking for.
10. Grill plum tomatoes over fire for 3mins.
11. Fries should now be ready.
Mustard butter
1. Easy peasy, add mustard to butter and mix until solid.
Gravy
1. Add butter to hot pan.
2. Add your chopped mushrooms and let the mushrooms cook for 2mins.
3. Add vegetable stock and mix with mushroom and butter.
4. Pour boiling water into pan and continue mixing.
5. Add onion gravy granules and mix.
6. Bring up to boil and you’re ready to pour!
Bring everything together and plate up – enjoy!
