For our last QUIZINE IN QUARANTINE dessert we go for something extremely easy, but so delicious! We give you a flavour of home – Suji Halwa.
Suji, is a highly regarded sweet dish in the Indian subcontinent. Several variants of this dish are available under other names in various parts of India. It is also served in Europe and United States as semolina pudding. It was first brought into the subcontinent by the Arabs, and was embraced by various Indian states, all adding their own take!
Suji is usually served as both breakfast and/or a dessert item, however as it is easy to prepare, it is often favoured as a breakfast item, especially with some puree bread.
INGREDIENTS (serves 6)
2 cups semolina
2 tbsp. ghee
3 cups of sugar
3 cups of water
3 cinnamon sticks
2 bay leaves
2 cardamom pods
Roasted nuts and sultana for garnish
1. In separate pot, heat water, cinnamon sticks, bay leaves, cardamom and sugar, stir often and bring to boil.
2. In another pot, roast semolina at a low heat for 5-7 minutes till parts turn brown.
3. Once syrup has come up to boil, and semolina is browned a little, add syrup mix to roasted semolina. Make sure you use a sieve and stir in between.
4. Add ghee to the mix and fold until nice, smooth and soft texture.
5. Garnish with roasted nuts and sultanas and serve!
