We have another one for dessert lovers in today’s episode of QUIZINE IN QUARANTINE. A dessert that is literally named ‘pick me up’, a coffee drinker’s delight – Tiramisu.

Most accounts of the origin of tiramisu date its invention to the 1960s in the region of Veneto, Italy.

Traditional tiramisu contains a short list of ingredients, but considering everyone has been baking in lock-down and lady finger biscuits were hard to come by, we remix this Italian classic, but stay with the Italian theme!

QIQ’s one of a kind Tiramisu!

INGREDIENTS (Serves 6)
600g Mascarpone cheese
300ml Double cream
2 Madeira cake loafs
1 cup Sugar
1 packet Biscoff biscuits
2 tbsp. Black coffee
1 ½ cups of water
2 tbsp. Nutella
1 tsp. Vanilla essence
Chocolate for topping

1. Mix mascarpone cheese and double cream until thick and fluffy.

2. Add sugar and vanilla essence, and mix.

3. Set mixture aside to work on layering the tiramisu.

4. Start by adding your madeira cake slices at the bottom of baking
tray.

5. Add coffee to cold water and pour over cake.

6. Cover cake with cream mixture for first layer

7. Add Biscoff biscuits for second layer.

8. Again, cover with cream mix.

9. Repeat process until you get to the final layer of cream.

10. Add Nutella to the last bit of cream and fold in.

11. Scoop cream and chocolate mixture onto the last layer.

12. Finish with chocolate shavings.

13. Pop into the fridge for 3-4 hours to set before it can be served!
